Damper is a traditional Australian soda bread that was once a staple food for swagmen, drovers, and stockmen in the Australian outback. Made from basic ingredients, this simple bread is cooked over an open fire or in a camp oven. Today, it’s enjoyed as a comforting treat at home or around a campfire. This article will guide you through an authentic Damper recipe, allowing you to enjoy a taste of Australia’s culinary heritage.

Ingredients

  • 3 cups self-raising flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 1/2 cup water
  • 2 tablespoons butter, melted

Instructions

  1. Preheat and Prepare:
    • Preheat your oven to 375°F (190°C). If cooking over a campfire, prepare your camp oven or Dutch oven by preheating it with hot coals.
    • Line a baking sheet with parchment paper or lightly grease your camp oven.
  2. Mix the Dry Ingredients:
    • In a large bowl, combine the self-raising flour, salt, and sugar. Mix well to distribute the ingredients evenly.
  3. Add Wet Ingredients:
    • Make a well in the center of the dry ingredients and add the milk and water. Mix with a wooden spoon until a soft dough forms.
  4. Knead the Dough:
    • Turn the dough out onto a lightly floured surface and knead gently for a few minutes until smooth. Shape the dough into a round loaf.
  5. Bake the Damper:
    • Place the dough onto the prepared baking sheet or into the preheated camp oven. Use a sharp knife to cut a cross into the top of the dough.
    • Brush the top with the melted butter for a golden crust.
    • Bake in the preheated oven for 30-35 minutes, or until the damper is golden brown and sounds hollow when tapped on the bottom. If using a camp oven, place hot coals on the lid and bake for about the same time.
  6. Serve:
    • Allow the damper to cool slightly before serving. Slice and serve warm with butter, golden syrup, or jam.

Tips for Perfect Damper

  • Flour Type: If you don’t have self-raising flour, you can make your own by adding 2 teaspoons of baking powder per cup of plain flour.
  • Campfire Cooking: For an authentic experience, cook the damper over a campfire using a cast iron camp oven. Be sure to manage the heat by adjusting the coals as needed.
  • Flavor Variations: Add dried fruits, herbs, or cheese to the dough for a flavorful twist on the traditional recipe.

Damper, with its simple preparation and hearty taste, is a wonderful way to experience a piece of Australian history. Whether enjoyed at home or around a campfire, this bread is sure to bring comfort and delight. Enjoy your rustic culinary adventure!

Bonus: Australian Pumpkin Scones Recipe

To complement your Damper, consider making traditional Australian Pumpkin Scones.

Ingredients

  • 2 cups self-raising flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup cold butter, cubed
  • 1 cup cooked, mashed pumpkin (cooled)
  • 1/4 cup milk
  • 1 egg, beaten

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, combine flour, sugar, salt, cinnamon, and nutmeg.
  3. Add Butter: Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Combine Wet Ingredients: In another bowl, mix the mashed pumpkin, milk, and beaten egg.
  5. Form Dough: Add the wet ingredients to the dry ingredients and mix until just combined. Turn the dough onto a floured surface and knead gently.
  6. Cut Scones: Pat the dough to about 1-inch thickness. Use a round cutter to cut out scones and place them on the prepared baking sheet.
  7. Bake: Bake for 12-15 minutes until golden brown.

Serve these pumpkin scones warm with butter for a delightful treat alongside your damper.
