Traditional Indian Recipe: Aloo Paratha

Aloo Paratha is a popular North Indian flatbread stuffed with a spiced potato filling. It is a favorite breakfast dish and is often enjoyed with yogurt, pickles, and butter. Here’s a detailed guide to making authentic Aloo Paratha at home.

Ingredients

For the Dough:

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • Water, as needed
  • 2 tablespoons oil or ghee

For the Potato Filling:

  • 4 large potatoes, boiled and mashed
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves, chopped
  • 1 tablespoon lemon juice

For Cooking:

  • Ghee or oil, as needed

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the whole wheat flour and salt.
  2. Gradually add water and knead to form a smooth and soft dough.
  3. Add the oil or ghee and knead again for a few minutes until the dough is pliable.
  4. Cover the dough with a damp cloth and let it rest for 20-30 minutes.

Step 2: Prepare the Potato Filling

  1. In a mixing bowl, combine the boiled and mashed potatoes, chopped green chilies, minced ginger, cumin seeds, ground coriander, ground cumin, turmeric powder, red chili powder, and salt.
  2. Add the chopped coriander leaves and lemon juice. Mix well to combine.
  3. Divide the filling into equal-sized portions and set aside.

Step 3: Assemble the Parathas

  1. Divide the dough into equal-sized balls.
  2. Roll out each ball into a small disc.
  3. Place a portion of the potato filling in the center of the disc.
  4. Bring the edges of the dough together to enclose the filling, pinching to seal.
  5. Gently flatten the filled dough ball and roll it out into a flatbread, being careful not to let the filling spill out.

Step 4: Cook the Parathas

  1. Heat a tawa or griddle over medium heat.
  2. Place the rolled-out paratha on the hot tawa and cook until bubbles start to form on the surface.
  3. Flip the paratha and drizzle some ghee or oil around the edges.
  4. Cook until both sides are golden brown and crispy.
  5. Remove from the tawa and keep warm. Repeat with the remaining dough and filling.

Step 5: Serve

  1. Serve the hot Aloo Parathas with yogurt, pickles, and a dollop of butter.

  • Potato Filling: Ensure the potato filling is smooth and free of lumps for easy rolling.
  • Dough Consistency: The dough should be soft but not too sticky to prevent tearing while rolling.
