Vanilice – Traditional Serbian Vanilla Cookies

Vanilice are traditional Serbian cookies, beloved for their delicate texture and sweet, vanilla-flavored taste. These bite-sized treats are often enjoyed during holidays and special occasions. Here’s how to make these delightful Serbian cookies at home.

Ingredients:

  • 250g unsalted butter, softened
  • 100g powdered sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 300g all-purpose flour
  • 100g ground walnuts
  • Pinch of salt
  • Raspberry jam (for filling)
  • Powdered sugar (for dusting)

Instructions:

  1. Prepare the Dough:
    • In a large bowl, cream the softened butter and powdered sugar together until light and fluffy.
    • Add the egg yolk and vanilla extract, and mix until well combined.
    • Gradually add the flour, ground walnuts, and a pinch of salt, mixing until a soft dough forms.
    • Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  2. Roll and Cut the Cookies:
    • Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
    • Use a small round cookie cutter to cut out circles from the dough. Place the circles on the prepared baking sheet.
  3. Bake the Cookies:
    • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
    • Remove from the oven and let the cookies cool completely on a wire rack.
  4. Assemble the Vanilice:
    • Once the cookies are cool, spread a small amount of raspberry jam on the bottom of one cookie and sandwich it with another cookie on top.
    • Repeat with the remaining cookies.
  5. Dust with Powdered Sugar:
    • Generously dust the assembled cookies with powdered sugar.
    • Store the cookies in an airtight container, where they will soften and become even more delicious over the next few days.
