Ca Kho To is a traditional Vietnamese dish featuring fish caramelized in a savory and slightly sweet sauce, typically cooked in a clay pot. This rich and flavorful dish is often served with steamed rice and fresh vegetables. Follow this recipe to create authentic Ca Kho To at home.

Ingredients:

  • 1 lb (450g) catfish or any firm white fish, cut into steaks
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon vegetable oil
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 Thai bird chilies, chopped (optional)
  • 1/2 cup coconut water or water
  • 1 tablespoon caramel sauce (optional, for extra color)
  • Fresh cilantro, chopped (for garnish)
  • Sliced green onions (for garnish)

Instructions:

Preparing the Fish:

  1. Marinate the Fish:
    • In a bowl, combine the fish sauce, soy sauce, and sugar. Add the fish steaks and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Cooking the Fish:

  1. Caramelize the Sugar:
    • In a clay pot or heavy-bottomed skillet, heat the vegetable oil over medium heat. Add the sugar and cook, stirring constantly, until it melts and turns a deep amber color.
  2. Add Aromatics:
    • Add the sliced onion, minced garlic, and chopped chilies (if using) to the pot. Cook until the onion is soft and fragrant.
  3. Add the Fish:
    • Add the marinated fish steaks to the pot, along with the marinade. Cook for 2-3 minutes on each side until the fish begins to brown.
  4. Add Liquid:
    • Pour in the coconut water or water and add the caramel sauce (if using). Bring the mixture to a simmer, then reduce the heat to low.
  5. Simmer:
    • Cover the pot and simmer for about 20-25 minutes, or until the fish is cooked through and the sauce has thickened.

Serving:

  1. Garnish and Serve:
    • Garnish the Ca Kho To with chopped fresh cilantro and sliced green onions. Serve hot with steamed rice and fresh vegetables.
