  • 4 large potatoes, peeled and diced
  • 4 large carrots, sliced
  • 2 bell peppers, diced
  • 2 large tomatoes, chopped
  • 1 cup white wine
  • 4 cups beef or vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons paprika
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh parsley, chopped (for garnish)

  • Crusty bread

Instructions

Preparing the Ingredients

  1. Prepare the Meat: Cut the pork shoulder into chunks and slice the sausages. Set aside.
  2. Chop the Vegetables: Finely chop the onions, mince the garlic, and dice the potatoes, carrots, bell peppers, and tomatoes.

Cooking the Kotlovina

  1. Heat the Oil: In a large cauldron or heavy pot, heat the vegetable oil over medium heat.
  2. Brown the Meat: Add the pork chunks to the cauldron and brown them on all sides. Remove the pork and set it aside.
  3. Cook the Sausages: Add the sliced sausages to the cauldron and cook until they are browned. Remove the sausages and set them aside with the pork.
  4. Sauté the Onions and Garlic: Add the chopped onions to the cauldron and sauté until they are softened and translucent. Add the minced garlic and cook for another minute.
  5. Add the Vegetables: Add the diced potatoes, carrots, bell peppers, and tomatoes to the cauldron. Stir well to combine.
  6. Add the Meat and Spices: Return the browned pork and sausages to the cauldron. Stir in the paprika, dried marjoram, dried thyme, salt, and pepper.
  7. Add the Liquids: Pour in the white wine and beef or vegetable broth. Stir in the tomato paste. Bring the mixture to a boil, then reduce the heat to low.
  8. Simmer the Stew: Cover the cauldron and let the stew simmer for about 1.5 to 2 hours, or until the meat and vegetables are tender and the flavors are well combined. Stir occasionally and add more broth if needed.

Serving the Kotlovina

  1. Garnish: Once the stew is cooked, garnish it with freshly chopped parsley.
  2. Serve: Ladle the kotlovina into bowls and serve hot, accompanied by crusty bread to soak up the flavorful broth.
