Ingredients:
- 500g beef stew meat, cut into chunks
- 500g chicken pieces (legs or thighs)
- 500g pork ribs or shoulder, cut into chunks
- 2 ears of corn, cut into pieces
- 2 large plantains, peeled and sliced
- 3 large potatoes, peeled and cut into chunks
- 1 large yuca (cassava), peeled and cut into chunks
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tomatoes, chopped
- 1 bunch of cilantro, chopped
- 3 liters of water
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Avocado slices, for serving
- Cooked white rice, for serving

Instructions:
- Prepare the Meats:
- In a large pot, heat the vegetable oil over medium heat.
- Add the beef, chicken, and pork. Brown the meats on all sides, then remove them from the pot and set aside.
- Cook the Vegetables:
- In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft.
- Add the chopped tomatoes and cook until they begin to break down.
- Add the Liquids and Meats:
- Return the browned meats to the pot.
- Add 3 liters of water and bring to a boil.
- Reduce the heat to low and let it simmer for about 1 hour, or until the meats are tender.
- Add the Vegetables:
- Add the yuca, plantains, potatoes, and corn to the pot.
- Season with salt and pepper to taste.
- Continue to simmer for another 30-40 minutes, or until the vegetables are tender.
- Finish and Serve:
- Stir in the chopped cilantro and let the soup simmer for an additional 5 minutes.
- Serve the Sancocho hot, with a side of avocado slices, cooked white rice, and lime wedges.
