Ingredients

  • 1 lb salted cod (bacalhau)
  • 2 large onions, finely sliced
  • 4 cloves garlic, minced
  • 4 large potatoes, peeled and julienned
  • 6 large eggs
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Black olives for garnish
  • Olive oil for frying

Instructions

Preparing the Salted Cod

  1. Desalt the Cod:
    • Rinse the salted cod under cold water to remove excess salt.
    • Place the cod in a large bowl and cover with cold water. Soak for 24-48 hours, changing the water every 6-8 hours.
    • After desalting, drain and pat the cod dry. Remove any skin and bones, and shred the cod into small pieces.

Preparing the Potatoes

  1. Fry the Potatoes:
    • In a large frying pan, heat enough olive oil to cover the bottom of the pan over medium-high heat.
    • Add the julienned potatoes in batches and fry until golden brown and crispy. Drain on paper towels and set aside.

Cooking the Bacalhau à Brás

  1. Sauté the Onions and Garlic:
    • In a large skillet, heat 1/4 cup of olive oil over medium heat.
    • Add the sliced onions and sauté until they are soft and translucent.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Cook the Cod:
    • Add the shredded cod to the skillet and cook for about 5-7 minutes, stirring occasionally.
  3. Combine with Potatoes:
    • Add the fried potatoes to the skillet and gently toss to combine with the cod and onions.
  4. Add the Eggs:
    • In a bowl, beat the eggs with a pinch of salt and pepper.
    • Pour the beaten eggs over the mixture in the skillet.
    • Cook over low heat, stirring gently until the eggs are just set but still creamy.

Serving

  1. Garnish and Serve:
    • Remove the skillet from the heat and stir in the chopped fresh parsley.
    • Transfer the Bacalhau à Brás to a serving dish.
    • Garnish with black olives and additional parsley if desired.
