This dish is perfect for seafood lovers and is often enjoyed during festive occasions and family gatherings. Here’s a detailed recipe to bring this delicious Portuguese dish to your kitchen.

Ingredients

  • 1 lb mixed seafood (shrimp, clams, mussels, squid, and fish fillets)
  • 2 cups Arborio or short-grain rice
  • 4 cups fish or seafood stock
  • 1/4 cup olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 large tomatoes, chopped
  • 1/2 cup white wine
  • 1 teaspoon paprika
  • 1 teaspoon saffron threads (optional)
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped, for garnish
  • Lemon wedges for serving

Instructions

Preparing the Ingredients

  1. Prepare the Seafood:
    • Clean and devein the shrimp.
    • Scrub the clams and mussels under cold water.
    • Cut the squid into rings.
    • Cut the fish fillets into bite-sized pieces.

Cooking the Arroz de Marisco

  1. Sauté the Aromatics:
    • In a large pot or paella pan, heat the olive oil over medium heat.
    • Add the chopped onion and sauté until it becomes soft and translucent.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Add the Vegetables:
    • Add the diced red and green bell peppers to the pot.
    • Stir in the chopped tomatoes and cook for about 5 minutes until the vegetables soften.
  3. Add the Rice and Spices:
    • Stir in the Arborio rice, coating it well with the oil and vegetables.
    • Add the paprika and saffron threads (if using).
  4. Deglaze with White Wine:
    • Pour in the white wine and stir, scraping up any browned bits from the bottom of the pot.
  5. Add the Stock:
    • Pour in the fish or seafood stock and bring the mixture to a boil.
    • Reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally.
  6. Cook the Seafood:
    • Add the shrimp, clams, mussels, squid, and fish pieces to the pot.
    • Stir gently to combine and cover the pot.
    • Cook for another 10-15 minutes, or until the rice is tender and the seafood is cooked through.

Serving

  1. Garnish and Serve:
    • Remove the pot from heat and let it rest for a few minutes.
    • Garnish with chopped fresh cilantro or parsley.
    • Serve the Arroz de Marisco hot, with lemon wedges on the side.

  • Different Seafood: Use any combination of your favorite seafood, such as scallops, lobster, or crab.
