Finnish Cabbage Rolls (Kaalikääryleet)

Kaalikääryleet, or Finnish Cabbage Rolls, are a beloved traditional Finnish dish. These hearty rolls are made with tender cabbage leaves filled with a savory mixture of minced meat and rice, then baked to perfection. This dish is comforting and perfect for a cozy family meal or special occasion. Here’s how you can make them at home.

Ingredients:

  • For the Cabbage Rolls:
    • 1 large head of cabbage
    • 1 pound ground beef (or a mix of ground beef and pork)
    • 1 cup cooked rice
    • 1 onion, finely chopped
    • 1 egg
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 teaspoon allspice
    • 2 tablespoons butter
    • 1/2 cup milk
  • For the Sauce:
    • 2 cups beef broth
    • 1/2 cup heavy cream
    • 2 tablespoons flour
    • 1 tablespoon butter

Instructions:

  1. Prepare the Cabbage Leaves:
    • Bring a large pot of water to a boil. Remove the core of the cabbage and carefully place the whole head in the boiling water. Blanch the cabbage until the outer leaves are tender, then remove and let cool slightly. Gently peel off the leaves and set aside.
  2. Prepare the Filling:
    • In a large bowl, mix the ground meat, cooked rice, chopped onion, egg, salt, pepper, and allspice until well combined.
  3. Assemble the Cabbage Rolls:
    • Take a cabbage leaf and place a generous spoonful of the filling at the base of the leaf. Roll the leaf tightly around the filling, tucking in the sides as you go. Repeat with the remaining leaves and filling.
    • Preheat your oven to 375°F (190°C). Grease a large baking dish with butter.
  4. Bake the Cabbage Rolls:
    • Arrange the cabbage rolls in the baking dish, seam side down. Pour the beef broth over the rolls, cover with foil, and bake for 1 hour.
  5. Prepare the Sauce:
    • In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux, then slowly whisk in the heavy cream. Cook until the sauce thickens, about 5 minutes. Season with salt and pepper to taste.
    • After the cabbage rolls have baked for 1 hour, remove the foil and pour the sauce over the rolls. Return to the oven and bake uncovered for an additional 30 minutes, or until the sauce is bubbly and the rolls are golden brown.
  6. Serve:
    • Serve the cabbage rolls hot, garnished with fresh herbs and a dollop of lingonberry jam if desired.
