Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 3-4 tablespoons ice water

For the Filling:

  • 6 slices bacon, chopped
  • 1 cup Gruyère cheese, grated
  • 1/2 cup Parmesan cheese, grated
  • 3 large eggs
  • 1 1/2 cups heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg

Instructions:

Preparing the Crust:

  1. Make the Dough:
    • In a large mixing bowl, combine the flour and salt. Add the chilled, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  2. Add Water:
    • Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Roll Out the Dough:
    • On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie dish. Transfer the dough to the pie dish, trim any excess, and crimp the edges. Refrigerate the crust while you prepare the filling.

Preparing the Filling:

  1. Cook the Bacon:
    • In a skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and drain on paper towels.
  2. Mix the Cheeses:
    • In a bowl, combine the grated Gruyère and Parmesan cheeses.
  3. Whisk the Custard:
    • In a separate bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.

Assembling the Quiche:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Add the Filling:
    • Sprinkle the cooked bacon evenly over the bottom of the chilled pie crust. Sprinkle the grated cheeses over the bacon. Pour the egg and cream mixture over the cheese and bacon.
  3. Bake:
    • Bake the quiche in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown. A knife inserted into the center should come out clean.
  4. Cool:
    • Allow the quiche to cool for at least 10 minutes before slicing and serving.
