Laufabrauð, or leaf bread, is a traditional Icelandic flatbread made during the Christmas season. These thin, crispy breads are intricately decorated with patterns that resemble leaves or snowflakes. Follow this recipe to create beautiful and delicious Laufabrauð at home.

Ingredients:

  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 cup butter, melted
  • 1 cup warm milk
  • Vegetable oil for frying

Instructions:

Preparing the Dough:

  1. Mix Dry Ingredients:
    • In a large bowl, combine the flour, salt, and sugar.
  2. Add Wet Ingredients:
    • Stir in the melted butter and warm milk until a dough forms.
  3. Knead the Dough:
    • Transfer the dough to a lightly floured surface and knead until smooth and elastic, about 5-7 minutes.
  4. Rest the Dough:
    • Cover the dough with a damp cloth and let it rest for about 30 minutes.

Shaping and Decorating the Laufabrauð:

  1. Divide the Dough:
    • Divide the dough into small, equal-sized balls (about the size of a golf ball).
  2. Roll Out the Dough:
    • On a lightly floured surface, roll each ball into a very thin circle, about 1/8 inch thick.
  3. Decorate the Bread:
    • Using a sharp knife or special leaf bread cutter, cut intricate patterns into the dough circles. Traditional designs include leaves, snowflakes, or geometric shapes.

Frying the Laufabrauð:

  1. Heat the Oil:
    • In a large skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat until hot.
  2. Fry the Bread:
    • Carefully add one dough circle at a time to the hot oil. Fry until golden brown and crisp, about 1-2 minutes per side. Use tongs to flip the bread and remove it from the oil.
  3. Drain the Bread:
    • Place the fried bread on a paper towel-lined plate to drain any excess oil.

Serving:

  1. Serve Warm:
    • Serve the Laufabrauð warm or at room temperature. It can be enjoyed on its own or with butter.
