Colcannon is a traditional Irish dish made from mashed potatoes mixed with cabbage or kale. This hearty and comforting side dish is often enjoyed during festive occasions and is beloved for its simplicity and rich flavors. Here’s how you can make this classic Irish dish at home.

Ingredients:

  • 4 large potatoes, peeled and cubed
  • 1/2 head of cabbage, finely shredded (or use kale)
  • 1 cup milk
  • 1/2 cup butter
  • 1 bunch green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. Cook the Potatoes:
    • Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.
  2. Prepare the Cabbage:
    • While the potatoes are cooking, melt a little butter in a large pan over medium heat. Add the shredded cabbage and cook until tender, about 5 minutes. If using kale, cook it until it wilts and softens.
  3. Warm the Milk:
    • In a small saucepan, heat the milk until warm, but do not let it boil.
  4. Mash the Potatoes:
    • Mash the cooked potatoes with the warm milk and the remaining butter until smooth and creamy.
  5. Combine:
    • Stir the cooked cabbage (or kale) and chopped green onions into the mashed potatoes. Season with salt and pepper to taste.
  6. Serve:
    • Serve the colcannon hot, optionally garnished with a pat of butter on top.
