Ingredients:
- 225g (8 oz) self-raising flour
- 1 teaspoon mixed spice
- 100g (3.5 oz) dark brown sugar
- 225g (8 oz) mixed dried fruit (raisins, sultanas, currants)
- 1 egg
- 250ml (1 cup) cold tea
- 1 tablespoon whiskey (optional)
- A ring, coin, or other small charm (wrapped in greaseproof paper, optional)
Instructions:
- Soak the Fruit:
- Place the mixed dried fruit in a bowl and pour over the cold tea and whiskey (if using). Leave to soak overnight or for at least several hours until the fruit has plumped up.
- Prepare the Batter:
- Preheat your oven to 170°C (325°F). Grease and line a loaf tin.
- In a large mixing bowl, sift together the self-raising flour and mixed spice. Stir in the brown sugar.
- Make a well in the center and add the soaked fruit along with any remaining liquid, and the beaten egg. Mix well to combine into a thick batter.
- Add the Charm (Optional):
- If including a charm, wrap it securely in greaseproof paper and stir it into the batter.
- Bake the Barmbrack:
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake in the preheated oven for about 1 hour, or until a skewer inserted into the center comes out clean.
- Cool and Serve:
- Allow the barmbrack to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
- Serve sliced and spread with butter.
